WANTED: YOUR FAVORITE RECIPES!
The Lake Ramsey Civic Association would like to announce the revival of the upcoming production of our very own Cookbook! The Civic Association Potluck Dinners have been proven testimony to the many wonderful cooks in our own neighborhood, and so it is only natural that Lake Ramsey should have its own Cookbook.
Jan Clark and Paulette Hecker began this endeavor two years ago but realized what a large feat it was to create a cookbook. They are so grateful to now have several Lake Ramsey ladies volunteering their assistance to make this a success. They are hoping to have the Cookbook ready to give as Christmas presents this year!! Won't they make wonderful gifts!
This can only be accomplished with your help. The Recipe Ladies hope everyone at Lake Ramsey, men and women, will contribute to the Cookbook by submitting their favorite tried and true recipes. The Cookbook will contain the usual categories--Appetizers, Main Dishes, Desserts, etc. To ensure uniformity, below is a sample recipe to follow, with some guidelines.
BROCCOLI SUPREME
2 (10-oz.) (20 oz. total) packages frozen chopped broccoli
1 (10 3/4-oz.) can cream of mushroom soup
8 oz. sour cream
2 large eggs, lightly beaten with fork
1/2 onion, finely chopped
12 oz. shredded mild Cheddar cheese
1/4 cup melted butter
1 1/2 cups herb-seasoned stuffing crumbs (Pepperidge Farm)
1. Preheat oven to 350 degrees. Cook broccoli in microwave on high for 5 minutes.
Drain broccoli very well, using paper towels to absorb all moisture.
2. Stir together soup, sour cream, eggs and onion. Blend in cooked broccoli.
Season with pepper and Tony Cachere's as desired; pour into a lightly greased 13-x-9-inch baking dish.
3. Sprinkle with cheese.
4. Stir together stuffing crumbs and 1/4 cup melted butter; sprinkle over top of casserole.
5. Bake at 350 degrees for 35 to 40 minutes or until golden.
Makes 8 servings.
