Recipe of the Month … by Carolyn Block
Copper Pennies
2 lbs carrots, cut crosswise
1 small onion, finely chopped
1 medium ell pepper, finely chopped
3 ribs celery, finely chopped
1 cup tomato sop, undiluted
1 cup sugar
¼ cup oil
¾ cup apple cider vinegar
1 tbsp dry mustard
1 tbsp Lea and Perrin Worcestershire sauce
Cook carrots in salted water until fork tender. Add onion, bell pepper, and celery to carrots. Set aside. Mix and bring to a boil….soup, sugar, oil, vinegar, mustard and Lea & Perrin. Pour hot mixture over vegetables. Refrigerate overnight. Serves 10-11

August… A return to the routine. After a long winter (well not so long for us, but long enough) I long for summertime and the freedom to come and go without school schedules, flashing lights at 3:00 and all the many other things we schedule into our already busy days.
I can’t wait to get back into the water, relax and have friends and family over for a bar-b-q, and other outdoor activities at home. As the Hot August Nights engulf me, I start longing again... this time it is for the cooler, end of the hectic summer schedule, and a return to the routine. Seasons come and seasons go. This too shall pass. With every season in our lives we can be assured that it too will give way to yet another season. So if you are going through a rough time… it doesn’t come to stay …it will come to pass. There is a time to laugh and a time to cry. If you are crying hang on …if you are laughing….

July’s Board Meeting Highlights
–All present but Jan Clark
-Newsletter corrections given…5 new board members to be elected not 4, and the President elect will be president
Speed bumps were discussed –where to put them and how many and cost. The first test speed bump will be in the front by the weir and made of asphalt. Cars can safely go over at 20-25 mph.
-Joe Urick and Doug Block will determine where they go. (if you don’t want a speed bump by your home let one of them know)
-Evelyn spoke and said she was against speed bumps but now is for them, and makes motion to install.
-Waiting on Guidry to fix drain
-Street signs are in and paid for. Some of them were ordered last year but paid for this year. Budget for them was discussed.
-One sign was put where a driveway is to be built, and needs to be moved
-Fences were discussed and those willing to change were appreciated
-Unrestricted lots will be assessed for road usage
-Can sign a document to legally come under the restrictions and covenants was discussed.
-Also owner can incorporate covenants with their act of sale to bring new owner in line with covenants.
-Drain by Bob Champane draining slow…lake level too high, get Mike Urban to shoot elevation
-Joe Urick (Pres. Elect) will chair committee and will bring the board potential nominees

-Personal grievances were discussed about dues
-Specific dimensions for fences to get approval discussed and voted on…must be no taller than 4-5 ft. with 4-6inch gaps on lakeside. Opposite side can have a 6ft fence with no gaps.
ASK Him… to give you the strength to surprise your friends and children with kindness and comforting words when they make mistakes- instead of disappointment or anger. (Ask Him by Jane Harvey)
The Gate is Now Working…after being hit by lightening and out for repair, the gate is once again running so …slow down when you come around the bend, and have your card ready. For all of our new neighbors …here is a little gate help. If you forget your card….call a friend ,your phase rep. or the police. They will let you in. Keep their phone numbers or a newsletter in your car for easy access. If you are expecting company when the gate is closed, give them your access number. This will be a number by your name on the key- pad. Give that number to your guests when they come to visit. All they need to do is punch in your number, nothing else. The phone will automatically call your home. And you of course, will press ”9” on your home phone to let them in.
* NOTE… the call has to come through the key- pad phone. Their cell phone will not access the gate even if they are right by the keypad phone.
Upcoming Events…
Homeowners Board Meeting …is always on the 4th Thursday of the month at the Fire Station on LA 25. … August 25 at 7:00pm. The meeting is open to all property owners.
Civic Association .. Next Civic Association “Pot Luck”… August 18th at 6:30. At the home of Carl and Rita Rebouche…14301 Riverlake Dr. This is open to all residents and lot owners.
Although the weather has been dreadfully hot or depressingly rainy there are good time to come. The board of Lake Ramsey Civic Club met last week and have a great fall line up for you. Continue to watch the bulletin board for coming events and announcements.
The last potluck dinner of the year will be hosted by Carl & Rita Rebouche, 14301 Riverlake on Aug. 18, at 6:30. This is open to all residents and lot owners of Lake Ramsey and we would love to see you there.
September will be cooling off and to celebrate with a full moon and a party Sandy Miler and team will host a barge night out. Sounds like a lot of fun. The date is Sat Sept. 17. Stay tuned for more info coming soon. Members only!
October holds a surprise party for all members, and will be hosted by Evelyn Bordelon and her team. Info. will be announced in Sept.
In November the members will gather to cast their votes for the board of 2006, can you believe 2006? Katy & Louis Zeringue will host a dessert evening on Sunday afternoon, Nov. 6, where the ballots will be cast and everyone will partake of scrumptious desserts. All calories will be removed in observance of the forthcoming holiday parties and goodies.
At this time we are preparing the Civic Club nominees for next year. Would you like to be part of the coming year’s plans and parties? It is really a lot of fun and not too much work. We could use some new ideas and suggestions, please contact me if you would be willing to serve on the Civic Club board in 2006. 898-3545.
Do you have a soldier stationed overseas? If so, please contact me with the name completed address, etc. We are planning to do something special to make their holiday season a little brighter. Need this info. ASAP.
I would like to take this time to thank the Home Owner’s board for their hard work. So much has been accomplished and so many have worked long and hard behind the scenes to keep our little community progressing. There are countless hours that are put in on your behalf and the betterment of this neighborhood. Just like the United States, we may not be perfect, but we’re the best there is! Please give consideration to becoming a member of the Home Owner’s board and helping this community remain the best. Don’t neglect your responsibility to come out and vote for the new members of the Home Owners, it is so important to YOU. You can be part of the solution, not part of the problem.
Making a difference … It’s so easy to sit and complain when things don’t go the way you want. When you see what needs to be done and no one is doing it. You’ve got a vision of how things should be, but no one else seems to see what you see. It might not be getting done because you aren’t on the board. Make a difference… run for the Lake Ramsey Homeowner Board. (5 positions will be opening up: If you are interested in running contact someone in the nomination committee. Quarterly Report from Your Treasurer—Evelyn Bordelon
“Wow”----The homeowners dues have been “Rolling on the River,“ oops---“Rolling on the Lake.”
How wonderful it’s been to see and speak to such good and concerned residents, lot owners and many homebuilders who have given 100% co-operation to me and the board.
Our dues for 2005 have been collected at an all time high. We’ve collected dues in considerable amounts for previous years. Our goal is to collect 100% of all dues owed. Hopefully by my next quarterly report the goal will be achieved; and we’re not far fro it. Phases I, II, III and IV have been on board for the betterment of Lake Ramsey. Any problems with payment of dues please contact me #985-809-5771.
I must give credit to the board, who have all worked together with great stride and courage to get the job done. The concern of the board has been demonstrated with this slogan “One for all and all for one.” I borrowed that saying from the Three Musketeers. Our nine members have accomplished many tasks, as I’m sure you have heard about at the homeowner’s last couple of meetings at the firehouse. Street repairs, building up of the weir in front, information and covenants signs, covenant violations being addressed by board members helping with collection of dues. Forming the committee for enforcement of uncut lawns as of 8/1/05, keeping homeowner building plans in line, reporting the news monthly and lastly flying our American Flag in the front of the subdivision. It’s the dream team.
Thanks for letting me get to know all of you. When I moved to the North Shore I thought I would never see my family because of the travel distance: but I was mistaken because all of you have become family to the treasurer and her husband, Larry
Just So you Know…Questions and Answers…What is the Homeowner Board doing???? About… liens on property, uncut lots…enforcing the covenants…speed bumps. What can we expect in the future???
Liens on Property… It is a very frustrating job to keep track of the homes and lots in Lake Ramsey and how fast they sell. Liens were about to be sent to people who did not own the lots and had many gone out “on time” they would have been done needlessly. However, with the hard detective work of a couple of people on the board (You know who you are) we have very few left, and they are in the hands of the Lawyer. When you can handle a situation peaceable, and more accurately, then you have done well, and I would like to commend the HOB for the way they have handled the liens.
Uncut lots… To assure that the lots are maintained a concern homeowner, Toni and Noel Faucheux (#985-875.7467), has taken over the responsibility of contacting owners and having lots cut, when any offenders do not cooperate. We need more neighbors to care enough and get involved. Thank You Toni and Noel !!!
Enforcing the Covenants… Are you someone who can talk to people without getting all upset….WE NEED YOU… to volunteer to help with this one. The covenants are the covenants…and there isn’t anything we can do about them except get 80% of the people to change them. If you want to change the covenants …then I would suggest that you put it on the ballot in October and spend your time and energy and money to get people to vote in your direction. Otherwise be quiet and get in line with them. We are bound by the covenants, and no one person or board can change them. (There are however some who are within the over 2- year time frame and nothing can be done legally to bring them in line, at this late date. (They can however voluntarily come in line :)
Speed Bumps…Speeders are why we need speed bumps…Are you guilty? Joe Urick is having the first” test” speed bump put in by the front weir around the end of August. So let us know what you think. We cannot read minds so speak up… kindly.
Homeowner dues… Most homeowners have paid their back dues, so lets make it unanimous and everyone get on board. Do your fair share. Where do I send them? All homeowner dues should be sent to PO Box 1746…Covington, La 70434
